Dong Po Pork Disaster

Today I attempted to make....


It looks soooo good in the picture! It looks great here as well. So I followed the recipe.






Everything was alright until...I was on the phone and forgot to check the meat. EVERYTHING TURNED INTO COAL, LITERALLY!!!

End Result
I cooked the pork for 3 hours + 1 hour of steaming and the pieces of pork belly are still so hard my teeth are still aching now seriously. What did I do wrong? T-T Is it because I used mini sauce pan to cook instead of a 5-ply pan?

    Mama gw telepon =.= dagingnya keliatan decent tapi keras, agak chewy. huahahahaha not sure if i will attempt to make it again. makan banyak waktu =.= pas selese itu jem 10:30pm omggg makan lemak babi banyak gitu smp hampir tengah malam
